Ingredients

  • Chicken thighs
  • Butter
  • Olive Oil
  • 2 chopped tomatoes
  • 2 chopped onions
  • Bouquet of parsley and thyme
  • Garlic
  • Mushrooms
  • Olives
  • Small glass of cognac
  • Chopped parsley to serve

Method

  1. Brown chicken in olive oil
  2. Remove once browned and discard oil
  3. Add butter to pan and melt
  4. Put chicken back
  5. Add two chopped tomatoes and two chopped onions
  6. Cook for a bit
  7. Add a bouquet of parsley and thyme and garlic
  8. Add some hot water and stir
  9. Cook for half hour until chicken is cooked
  10. Add mushrooms and olives
  11. Add a small glass of cognac
  12. Let it bubble up
  13. At the end sprinkle over chopped parsley and chopped garlic before serving
